Recipe of the Week – Black Bean & Sweet Potato Flautas

I posted about this recipe from Peas and Crayons last week and had the chance to make it tonight.

In a word; AH-mazing!

It was a great vegetarian dinner that everyone loved. The only tweaks I made was omitting the cream cheese and spraying the corn tortillas with a bit more olive oil that was called for (I wanted them crispy). Next time, I think I’d also double the spices for flavor. Other than that, they were perfection.

And if you’re vegan, just omit the cheese and you’re good to go!

Ooooo these look awesome! My husband and I make sweet potato tacos w/ cilantro lime slaw and LOVE them so I’m betting this recipe will be a win as well. I love the sweet potatoes as a meat substitute, it gives the dish some texture that can sometimes feel “missing” when not using meat. While we’re not vegetarian or vegan we do try to go meatless the majority of the time.

Several years ago I weighed 337 pounds – I’ve lost 125 by radically changing what I eat and how I approach food in general. I love recipes like this that are healthy, full of flavor and look gorgeous at the same time. Thank you for sharing – have bookmarked the site.

Good for you! Our whole family went vegetarian last March – kids included – and I’ve been shocked at the change in our health. None of us are ever sick (my bout with the flu a couple of weeks ago is the first bout I’ve had with anything in a long time), I’ve had no problems with my asthma, no bronchitis (used to be a yearly thing for me), and none of the shaky, hypo-glycemia feelings that I had feared meant I was headed for diabetes. Now I just focus on eating whole foods and staying active. It’s easy when you think of it that way, right?

That’s the sweet potato taco recipe. There’s a few out there on the internet but this is our twist on the recipe. The recipe makes a decent amount of slaw which is great as I’ve put the left over on all kinds of dishes. I’ve even eaten it alone and it’s awesome :P.

My husband was vegan for about 6 months and during that time we tried quite a few vegan recipes that have stuck in our meal planning. One of my faves is quesadillas with hummus used in place of the cheese on whole wheat tortillas. We put baby spinach and salsa on them but you can stick anything in there!
